Legumes And Gastrointestinal Function in Relation to Diets for Diabetics

Abstract

Diets containing large quantities of beans may have sp ecial advantages for diabetic patients, as the carbohydrate from beans may be digested and absorbed more slowly from beans than from other foods. The mechanism by which this may occur could be similar to those by which some types of dietary fibre and dietary fibre components appear to slow absorption. Direct studies of mechanisms of action in man may be difficult; the pig may be a suitable model for study.
