Abstract
Ochratoxins are fungal secondary metabolites produced during storage by fungus of the genera Aspergillus, mainly in tropical and warmer regions and by Penicillium verrucosum, in temperate and colder areas. Ochratoxin A (OTA) displays a multiple toxicity, including immunotoxicity. Until present, there have been very few, sometimes contrasting, reports on the mechanisms underlying OTA immunotoxicity. In this review, we have summarized the researches done until present concerning the interaction between OTA and the immune response.
