Abstract
The behaviour of enzymes in media where the substrate, ionic concentration, or a solvent other than water is present at high levels, either alone or in combination, is of increasing industrial interest, particularly with immobilised enzymes such as glucose isomerase. High yields of fructose are obtained when this enzyme acts at high substrate levels in the presence of a selectively complexing oxyanion. This and other aspects such as storage of enzymes in concentrated media are discussed.
