Effect of delay between slaughter and rescalding on the susceptibility of chicken skin to the overscalded condition

Abstract

1. The effect was examined of a 1 to 48 h delay between processing chicken carcases and rescalding them at 57°C for 2 min on the response of the skin to overscalding. Susceptibility to overscalding was scored.

2. Susceptibility to overscalding showed a progressive decline as the time from initial processing increased. Processors wishing to produce overscalded carcases suitable for coating are advised to hard scald within 1 h of slaughter rather than to rescald carcases after they have been stored.
