Abstract
Methionine remains unchanged during the preparation of gelatin provided that the treatments do not involve any added oxidant. It is oxidized partially or even completely to methionine sulphoxide when, with the idea of destroying certain impurities, the collagen or gelatin are subjected to purification treatments (hydrogen peroxide, sodium peroxide, hypochlorite).
