Abstract

Gelatin causes low results in the determination of nitrite. A new procedure is described, based on separation of the nitrite on on anion-exchange resin. Spectrophotometric and polarographic investigations show that the effect is due to reaction of nitrous acid with tyrosine at pH 5. The reaction product is a fogging agent and has been detected in a fogging gelatin.
