Structure Formation in Gelatin Films

Abstract

The kinetics of structure formation during the setting and drying of gelatin films have been studied by means of optical rotation measurements on gelatm films. prepared under widely varying conditions. The separate contributions of helical conformation and planar orientation to the optical rotation are resolved by analysis of the data obtained from measurements with the films tilted at vanous angles to the incident beam of polarized light.

The studies are made with model systems consisting of comparatively thick films cast on glass plates and monitored during drying at controlled temperature and humidity.

The effects of gelatin hardeners on structural changes are considered. The relationship between the structure of films and their physical properties is discussed.

Résumé

La cinétique de formation de structures organisées pendant le figeage et le séchage des films de gélatine préparés dans des conditions très diverses a été étudiée par mesure du pouvoir rotatoire.

Les apports séparés de la configuration hélicoïdale et de l´orientation planaire à la rotation optique ont été déterminés en analysant les informations fournies par les mesures faites sur des films orientés sous différents angles par rapport à un faisceau incident de lumière polarisée.

Les études sont faites avec des modèles consistant en des films relativement épais coulés sur plaques de verre et maintenus pendant le séchage à température et humidité relative contrôlées.

Les effets des tannants sur les changements de structure sont étudiés. La relation entre la structure des films et leurs propriétés physiques est discutée.

Zusammenfassung

An Gelatineschichten wurde die Kinetik der Strukturbildung beim Erstarren und Trocknen unter unterschiedlichen Bedingungen mittels Messung der optischen Drehung verfolgt. Die jeweiligen Einzelbeiträge von Helixstruktur und planarer Orientierung wurden dabei aus der experimentell bestimmten Abhängigkeit der Gesamtdrehung vom Einfallswinkel des polarisierten Meßlichtes ermittelt.

Alle Untersuchungen wurden an vergleichsweise dicken, auf Glasplatten vergossenen Gelatineschichten bei Trocknung unter kontrollierten Temperatur—und Feuchtigkeitsbedingungen durchgeführt. Dabei wurde insbesondere der Einfluß von Härtungsmitteln auf die Strukturbildung untersucht.

Der Zusammenhang zwischen Struktur und physikalischen Eigenschaften der Galatinefilme wird diskutiert.

Le cinetiche di formazione della struttura di films di gelatina, dal momento che essa rapprende e durante l´essicamento, sono stati studiati per mezzo di misure ottiche di potere rotatorio su films preparati in un vasto numero di condizioni.

I contributi separati della conformazione elicoidale e dell´orientamento planare alla rotazione ottica, sono risolti in base all´analisi dei dati ottenuti da misure su films inclinati a vari angoli rispetto ad un raggio incidente di luce polarizzata.

Gli studi sono stati effettuati con sistemi modello consistenti, comparativamente, in films spessi stesi su lastre di vetro e misurati durante l’essicamento a condizioni di temperatura ed umidità controllate.

Sono stati considerati, pure, gli effetti sui cambi de struttura degli induritori della gelatina. Le relazioni tra la struttura dei films e le loro proprietà fisiche sono qui discusse.
