II. The sol and gel states of gelatine

Abstract

The proton exchange cross-relaxation model is tested by comparing transverse, longitudinal and rotating frame water proton relaxation in gelatine sols and gels. The theory provides a consistent quantitative interpretation without need to invoke contributions from hydration water. A possible exception is the rotating frame dispersion which appears to be associated with hydration water in the gel junction zones.
