A microbiological study of the extracts of leaf proteins

Abstract

Products of a leaf protein extraction process were examined for microbiological quality. Microbial numbers generally decreased with processing, mainly due to the heat treatments involved. Counts of Escherichia coli and Clostridium perfringens obtained in 22 samples of solid leaf protein concentrate (SLPC) ranged from 3 to 70 per g and 30 to 48 000 per g respectively. Salmonella was not detected in any of the SLPC samples.
