Nutrition in Space

Abstract

The biologic aspects of the space program have consistently taken second place to the engineering aspects. Only the determined efforts of academic biologists and physicians working with the space agency have permitted achievement of our successes in space. In the field of nutrition no one has worked with greater competence, determination and persuasiveness than the “first lady of American nutrition,” Dr. Doris Calloway. This is a superb summary of the nutritional component of our space effort given within the more general context of the biologic aspects of space flight.—Jean Mayer, Ph.D., Editor, Section on Clinical Nutrition.
