Abstract

What happens when man is malnourished or starved? This is an important question because as many as 14 million Americans have inadequate diets. Yet much evidence about body changes still rests on animal experiments. As man goes without food, his intestines function differently and even change in structure. When man is malnourished, these alterations depend on what substances he lacks in his diet.
