The previous speakers in this symposium have already dealt with many aspects of this important New Zealand industry. I. G. Watt, in particular, has broadly outlined the role of the Meat Division within the Department of Agriculture as it applies to the industry and allied fields. The purpose of this paper is to present the very important role that the veterinarian has to play in assuring the quality of foodstuffs derived from the New Zealand livestock industry.
