The Effect of PF‐127 on the Rheology Properties of Monoolein/Water Mixtures

Abstract

The rheological behavior of a cubic liquid crystalline monoglyceride/PF‐127/water system was investigated using a Haake RS‐75 viscometer. As the concentration of PF‐127 increased, the variation of the rheological properties of the systems revealed the changes of the internal structure of the cubic phases by means of small angle X‐ray scattering. When the concentration of PF‐127 increased from 5% (wt) to 15% (wt), the space group of the cubic phase transitioned from CD‐type to CP‐type. The frequency‐dependent storage and loss moduli were found for the cubic phase in the linear viscoelastic region. The rheological behaviors of the systems could be analyzed on the basis of Jones‐McLeish slip‐plane theory, and their deviation could be interpreted from their deviation the Cox‐Merz formula.
