ABSTRACT
The electro-viscous effect on stability and rheological behavior of oil-in-water (o/w) emulsions stabilized by an anionic surfactant (sodium dodecyl benzene sulfonate, SDBS) was studied by altering the emulsion pH. The emulsion pH was varied widely from 2 to 12. An increase in the pH of the emulsion led to an increase in emulsion stability, viscosity, and viscoelastic properties (G′, G″, , and tanδ), and a decrease in the mean droplet size and zeta potential of the emulsion. Emulsions were characterized as a flocculated structured liquid exhibiting a characteristic crossover frequency within the range of angular frequency studied in dynamic oscillatory measurements.
