ON THE FACTORS AFFECTING THE YIELD OF PREPARATION AND STABILITY OF MULTIPLE EMULSIONS

ABSTRACT

The effect of emulsifier II concentration and its HLB on the yield of preparation (Y1) and the stability (R) of the multiple emulsion has been studied.

It was found that at low emulsifier II concentrations, both yield of preparation and stability are significantly high regardless of the emul-sifiers HLB. At high concentrations, when w/o/w emulsion is formed, there is only one optimal HLB value for both yield of preparation and stability of the multiple emulsion. The difference in the behavior of the multiple emulsions formed from low or high concentration of emulsifier II is probably due to the significant difference in the multiple droplets size and shape.
