EFFECT OF OIL DROPLETS ON BRITTLENESS OF O/W EMULSION GEL

ABSTRACT

By using the porous glass membrane method, we obtained a monodispersed emulsion. Effects of oil varying in droplet size and volume on the brittleness and brittleness strain (breakability after rupture of emulsion gels by a compressive force) of o/w emulsion gels were investigated by compressive measurement.
