An investigation was conducted in order to find out the number of circumvallate papillae and bitter taste thresholds of people who live in the Southeastern Anatolia region of Turkey where hot pepper is consumed in unusually large quantities. The population of the research consisted of 63 subjects aged between 18–25. In the experimental group there were 30 subjects (15 men, 15 women) while in the control group there were 33 subjects (21 men, 12 women). The thresholds of the subjects were determined by the three drop method using Quinine Sulphate Dehydrate. In this research, people consuming chili pepper in large quantities generally discriminated lower concentrations of Quinine Sulphate from water blanks than did people consuming chili pepper in small quantities. However, no statistically significant difference was obtained and no difference was observed in the numbers of circumvallate papillae and bitter taste thresholds of the research population.
