Biosensors for food analysis

Abstract

Major biosensor principles are explained followed by some representative examples to elucidate the present state‐of‐art. Several tables with special emphasis on feasibility in food analysis summarize publications of biosensor applications. Most efforts are concentrated on the determination of single compounds and on food quality parameters.
