Abstract
The CYX presses presented are intended for a new technology of food treatment with high pressure. Unlike the compacting presses, 200-700 MPa pressures are used here. Operating secondary (high-pressure) fluid has to comply not only with requirements for high-pressure medium (low compressibility etc.) but with hygienic requirements, as well, and so have all parts the fluid comes into contact with. In the paper, technology and design of the CYX presses are partially described. Parameters of treatment time and other project data are even specified. The brief list of foods with parameters used for pressure treatment together with results are given in the paper.
