Summary
The technique of pulse radiolysis has been used to study radiolytic processes in egg-white. The yield of eaq− is 74·5 per cent of that in pure water. The half-life for the decay of eaq− is 4·5 × 10−8 sec and that for the decay of OH radicals is < 5 × 10−9 sec. Cystine anion-radicals are produced with a yield of G(Cy) = 1·44. Part of the cystine anion-radical decays via a reaction with oxygen (k(Cy
+ O2) = 1·3 × 108 M−1 sec−1).
