Resveratrol Content of Tunisian Wines

Pages 47-52 | Published online: 04 Aug 2010

Several studies have demonstrated that resveratrol (3,5,4'-trihydroxystilbene), a compound belonging to the phytoalexin family, involved in grape disease resistance, occurs in wines. It has been demonstrated that this compound might have cardioprotective and chemoprotective activities. I report here the presence of this compound in Tunisian wine. Analysis of resveratrol in wine was carried out using high-performance liquid chromatography.
