Abstract
Volatile compounds from Mentha spicata L. leaf were extracted by hexane extraction and supercritical Co2. Yield obtained by solvent extraction was 1.67% and 0.47% with supercritical Co2 extraction. Sensory profiles and GC/MS analysis of both extracts were performed and their results were compared to those obtained by steam distillation. The difference in aroma of the extracts was quite noticeable and is attributed to qualitative and quantitative differences in components.
