Volatile Components of Starfruit (Averrhoa carambola L.)

Abstract

Volatile components of starfruit were isolated by simultaneous steam distillation/solvent extraction. Fifty-six components were identified (8.9 mg/kg), of which the major ones were butyl acetate, ethyl decanoate and hexadecanoic acid.
