Abstract
Solvent extracts of fresh mandarin and tangerine peel have been investigated to identify new volatile constituents. As the main group of organoleptically interesting compounds, unsaturated aldehydes including decenals, decadienals, decatrienals, dodecenals and dodecadienals have been identified. Further trace components, such as (1,3Z,5Z)-undecatriene and two undecatetraenes, 3-butylpyridine, indole, alkylpyrazines, diethyl disulfide and alcohols related to the unsaturated aldehydes have also been detected
