Destruction of Listeria Monocytogenes in Meat (By Means of Microwave Oven)

ABSTRACT

Recent scientific studies in microwave field have shown that microwave sterilization can be a new method in future. In this study, the destruction of L. monocytogenes in lamb and quail meat were observed. Conventional and microwave heating systems were used. The results of two heating systems were compared according to control group and between themselves. It was observed that microwave heating is more effective than conventional heating to eliminate L. monocytogenes.
