ABSTRACT

The aim of the present study is clinical investigation of the effect of freeze dried fermented milk product included in the day diet of patients with hyperlipoproteinaemia combined with obesity, with a view to a complex evaluation of the possibilities for applying it as a prophylactic and therapeutic food. A skimmed and flavored freeze dried fermented milk product (FDFP) obtained with strain LBB.B.5, owned by the LBB-collection of LB BULGARICUM RDP Center, was included in the daily diel of 19 patients with hyperlipoproteinaemia and obesity, treated at the sanatorium in the town of Luki. The FDFP manufactured with LBB.B.5 was characterized with good tolerance and lack of adverse side effects in the patients. When it is included in the main diet for treatment of obese, patients, with or without hyperlipoproteinaemia, as a snack between meals (at 10 a.m. and 4 p.m.), it contributes to a statistically significant reduction of the body mass, as well as of both values of the arterial pressure of hypertensive patients. The product based on LBB.B.5 has a significant lowering effect both on the total plasma cholesterol and its fraction in low-density lipoproteins, and especially on the plasma triglycerides, with a substantial rise of cholesterol in the high-density lipoproteins.
