The Gluten—A Big Natural Biopolymer Genetic Determination and Function

ABSTRACT

The paper discusses the structure and function of one of the biggest natural biopolymers—gluten. Over the last two decades of the 20th century the biochemical, genetic and functional characteristics of the storage proteins in wheat have been studied intensively. This led to the finding of new interrelations between these proteins and their complex evolution.
