Epitomizing the “other” in ethnic eatertainment experiences

Abstract

Research on authenticity of eatertainment experiences from both supply and demand perspectives is meagre. This paper attempts to fill the gap by scrutinizing how ethnic-themed restaurant owners/managers use authenticating markers to create genuineness in their food offerings in the virtual cyber world and restaurant settings and how patrons share perceived authenticity of their experiences on a popular online review site (Yelp). The results indicate that patrons continue to seek experience of the “other” in objectively authentic eatertainment settings but in a negotiated manner so that it relates to their comfort and lifestyle. Suppliers, to a great extent, continue to cater to this need by offering negotiated “othered” cuisine experiences, although markers promoted to authenticate such experiences might differ.

Les restaurants à thème ethnique sont l’un des agents de socialisation culturelle les plus importants. Le point de comparaison pour ceux qui recherchent une expérience culturelle enrichissante est l’authenticité. Pourtant, la recherche sur l’authenticité de la bouffe-loisir reconnue aussi comme le « eatertainment » est plutôt modeste. Cet article tente de combler cette lacune en examinant comment les propriétaires/gestionnaires de restaurants à thème ethnique utilise l’authenticité et l’apparence dans un contexte virtuel. Dans ce monde virtuel, les paramètres de restauration sont examinés et comment les clients partagent l’authenticité perçue sur un site de la revue en ligne populaire (Yelp). Les résultats indiquent que malgré l’émergence du web, les clients continuent à rechercher des expériences authentiques, mais d’une manière négociée afin que cette expérience se rapporte à leurs conforts et leurs styles de vie. Cette recherche démontre que les fournisseurs continuent à répondre à ces besoins en offrant des expériences de bouffe authentiques.
