Ecomaterials Based on Food Proteins and Polysaccharides

Abstract

The continuously increased use of non-biodegradable synthetic polymeric packaging films and plastics has led to serious ecological impacts to human everyday life. A combination of proteins from food resources and polysaccharides from plant resources allows produce ecomaterials including edible films and biodegradable materials, which provides a possible replacement of synthetic polymers with specific applications. The aim of this review is to offer a comprehensive view of the state of the art on ecomaterials based on polysaccharides and food proteins, emphasizing the relationship between composition, processing, structure and properties of the ecomaterials.
