Study of starch in Taiwan

Abstract

Physicochemical properties of 15 kinds of starches isolated from the crops grown in Taiwan are reviewed. The properties discussed include their granular sizes, shapes, gelatinization temperatures, characteristics of amylose components, and so forth. The utilization of some of these starches, especially legume starches, in the preparation of starch noodles and the qualities of the starch noodles are also discussed.
