Relative Bitterness of Reduced and Nonreduced Iso-α-Acids in Lager Beer

Abstract

The relative bitterness of reduced and nonreduced iso-α-acids in lager beer was measured using a time-intensity protocol in which a trained panel evaluated seven concentrations of each compound in an unhopped lager beer. The peak intensities were measured, and within each panelist, a nonlinear dose-response curve was fit to the data. Equal–bitter relationships over a range of concentrations were created within each panelist for each reduced iso-α-acid/iso-α-acid pair. The parameters of these models were compared statistically using a one-sample, two-sided t-test, and combined groupwise relationships were generated. Accordingly, rho-iso-α-acids were significantly less bitter than iso-α-acids, and tetrahydro- and hexahydro-iso-α-acids were approximately equal in bitterness to iso-α-acids. Results were validated by a consumer panel.

RESUMEN

La relativa amargura de los iso-α-ácidos reducidos y no reducidos en la cerveza lager fue medida utilizado un protocolo de intensidad de tiempo en que un grupo entrenado evaluado siete de las concentraciones de cada compuesto en un cerveza lager fabricado sin lúpulo. Las intensidades de los picos se midieron, y dentro de cada miembro del grupo de expertos, una dosis-respuesta no lineal de la curva se ajustara a los datos. Igual–amargas relaciones en un rango de concentraciones se han creado dentro para cada miembro del grupo de expertos para cada par de iso-α-ácido/iso-α-ácido reducido. Los parámetros de estos modelos fueron comparados estadísticamente utilizando una prueba de t para una muestra, y combinado relaciones entre grupos se generaron. En consecuencia, rho-iso-α-ácidos fueron significativamente menos amargos que iso-α-ácidos, y tetrahidroy hexahidro-iso-α-ácidos son aproximadamente iguales en la amargura a iso-α-ácidos. Los resultados fueron validados por un panel de consumidores.
