Ultrasonic Characterization of North Pacific Albacore (Thunnus alalunga)

Abstract

This study examines the possibility of using a hand-held ultrasonic device to provideinformation about the composition of North Pacific albacore (Thunnus alalunga). The ultrasonic velocity and attenuation coefficient (1-6 MHz) of albacore samples of varying composition was measured over the temperature range 5 to 30EC. The lipid, protein, ash and moisture content of the same fish were measured using standard methods. Ultrasonic velocity versus temperature profiles were dependent on fish composition and could therefore be used to provide information about composition. Ultrasonic attenuation measurements were too variable to use as a means of providing information about fish composition. The availability of a hand-held ultrasonic device that is simple to use would be useful for grading albacore according to their composition.
