ABSTRACT
Proper cleaning and employee sanitation are necessary to remove Listeria spp. and other pathogens from processing plants. Cleaning effectiveness in crab processing plants was examined using an adenosine triphosphate (ATP) detection system and a rapid test for the detection of Listeria spp. microorganisms. Crab meat particles remaining after cleaning and sanitation procedures sometimes indicated false positive results for high residual microbial contamination. Highest mi-crobial loads were found on floors, drains, sinks, equipment, and the underneath side of picking tables. Listeria spp. microorganisms were found on floors, drains, cooler doors, gloves used to handle live crabs, sinks, and the tops and underneath side of picking tables. Manual and automatic hand washing procedures in these plants were compared for removal of Listeria spp. The automated hand wash cycle used was not as effective as the manual hand wash.
