Abstract
Nowadays, there are changes in all different fields of lifechanges which had accelerated. It is the same in the food sector. On the one hand technical inventions allow the production of innovative food. Furthermore the nutrition behavior of the people has changed completely during the past years.
The purpose of the article is to analyse the innovative behavior in the food market. Therefore it is necessary to take a closer look on the target groups industry, food stores and consumers to find out about changes of the innovative behavior during the last years, the importance of innovations, and the importance of trends and innovations in the future.
