Abstract
Our aim is to investigate one particular aspect of the multifaceted phenomenon of ethnicity. We highlight the process of how an engagement with one's cultural roots often coexists and becomes intertwined with an invitation for others to join in and enjoy. The illustrations and examples for our consideration are three cookbooks written by Swedish-Ethiopian-American celebrity chef Marcus Samuelsson. In our analysis we employ the concepts of American-plus ethnicity and playful nostalgia. In addition, we comment on the concept of ubuntu, which Samuelsson has added to the issue of ethnicity within (American) culinary culture.

Hanne Pico Larsen is an adjunct professor at Columbia University. She is co-project leader for the Nordic Spaces program and is also affiliated with the Danish Folklore Archives. Susanne Österlund-Pötzsch
Susanne Österlund-Pötzsch is an archivist at the Archives of Folk Culture in Helsinki. She is also an affiliated research professor in Folklore Studies at Åbo Akademi University. Her research and publications focus on empirical and theoretical work concerning walking practices, Finland-Swedish ethnicity, performance and heritage.
