Résumé

Les différents types de papilles gustatives, linguales et extralinguales, ainsi que leur rôle dans la discrimination des quatre saveurs fondamentales (sucrée, salée, amère et acide) sont étudiées. II est aussi considéré l'importance d'autres facteurs associés avec le gout.

Summary

The various types of taste papillae, in and on the tongue have been studied, together with its role in discriminating between the basic tastes (sweet, sour, bitter and salt). The importance the other factors associated with taste is also discussed.
