Changes in the makeup and eating habits of the US population, an increasingly complex system of food distribution, and less stringent surveillance for infectious agents are among the factors that have led to an alarming increase in foodborne and waterborne illnesses in recent years. Drs Prier and Solnick address these issues and suggest changes in public health programs and consumer behavior that can minimize future outbreaks.
