Abstract

Honey contains numerous sugars and small quantities of gluconic acid (GA), which is the major organic acid in honey. To examine the correlation between GA and total sugar contents in honey, GA and total sugar contents were determined in 21 honey samples. The GA content was shown to be negatively correlated with the total sugar content (r = −0.788).
