FIGURE 1 Cross-section of the bottom half of an apple cut in half on the equator between stem and calyx ends. Before cutting the fruit in half, wedges were removed from the sun, shoulder, and shade sides of the whole fruit for analysis of TA after determination of firmness and SSC. The remaining tissue was sprayed with an iodine solution for determination of starch index.
