Abstract

The gelatin methionine residues can be involved in 2:1 or 1:1 complexes with Ag ■ The association constants of the Ag⁺—gelatin complex formation are similar at pH 3 for IAG gelatins from different origins. Standard enthalpy and entropy changes during complexation are slightly negative.
