Human gastric juice collected before and after administration of histamine, pentagastrin, and secretin, was stored at various temperatures. The peptic activity of both stimulated and unstimulated juice decreased by less than ten per cent during 8 days storage at + 2° C. At room temperature the decrease in activity was about 20 per cent during 8 days, whereas a similar decrease was already found after one day at + 37° C. Deep-freezing storage at —25° C resulted in a more variable and pronounced decrease in peptic activity. The loss of activity by deep-freezing increased with the acidity of the juice.
