The gastric emptying of fluid meals with various fat and osmolar concentrations has been studied in healthy volunteers. The emptying pattern can be described as composed of a rapid initial phase, followed by a phase with an approximately constant emptying rate lasting until the stomach is almost empty. It was also concluded that when fat-free meals were given, the osmotic load on the duodenum regulated the magnitude of the initial phase. On the other hand, fat in the meals markedly influenced the emptying rate during the prolonged phase.
