Metabolism by Intestinal Bacteria : The Effect of Bile Salts on Tartrazine Azo Reduction

Abstract

Washed whole cell suspensions of Proteus vulgaris reduce the azo link of tartrazine anaerobically.

Bile salts increase the rate of tartrazine azo reduction about five times in washed suspensions prepared from log phase cells, but very little in suspensions of stationary phase cells.
