Abstract
EkINV and BsINV are two invertases from Enterobacter kobei and Bacillus subtillis, respectively. The two enzymes were produced extracellularly at pH 3.0 and former at 45 °C while latter at 25 °C. The Km values were observed to be 1.7 mol/L (EkINV) and 1.9 mol/L (BsINV). Purification and characterization analysis revealed trimer structure EkINV having subunit molecular mass as 87.14, 42.98 and 29.0 kDa. Unlike, BsINV was monomer with molecular mass of 55.1 kDa. The invertases beside hydrolytic activity exhibited transfructolysation which is used in preparation of low calorie Ready To Serve mango juice and muffins.
