Perspective of Microbe-based Minerals Fortification in Nutrition Security

ABSTRACT

In recent years, probiotics have been increasingly proposed as health-promoting supplements in variety of food systems because of their physiological function and technological characteristics. Though there are large documents concerning the health benefits from these functional microbes, only a few literatures stated the requirements for mineral enhancement in food industry. Due to the health maintenance and specific supplementary demand, this review aims at proposing the screen routes for functional microbes selection on micronutrient supplement and the action on human health. In this article, the selection strategies of different functional strains for safe dietary supplement are investigated and proposed according to the health and security legislation. Moreover, the confirmed strain as micronutrient supplement or producer, including vitamins, selenium, chromium, iron, and zinc elements were summarized and discussed. This paper also reviews the studies of probiotics widely recognized health effects and provides the practicing dietitian some basics on supplement recommendations to better serve consumers.
