ABSTRACT
Resveratrol, as a promising bioactive, has received significant attention in the food industry owing to its multiple health-benefits. The increasing studies on resveratrol encapsulation to overcome application limitations highlight the need to summarize the current advances. This review firstly outlined the health benefits of resveratrol and their action principles. Afterwards, the current development of edible delivery systems of resveratrol was comprehensively introduced. Finally, the future research on the exploration of safe-to-eat and environment-friendly encapsulation systems with high loading capacity, concise delivery and versatile applications was prospected. This review will help foster the research and development of resveratrol-based healthy promoting products.
