Abstract
Beer proteinaceous materials were separated by high performance liquid chromatography on a molecular size basis using TSK SW columns. The sizes of the various proteinaceous fractions were estimated by comparing their elution positions with protein standards and proteins isolated from beer by gel-permeation chromatography. Components of >5 × 106, 330,000, 43,000, 10,000–20,000, and several lower molecular weight fractions were resolved. Beer was analyzed directly with no sample pretreatment other than decarbonation. Wort samples and beer foam fractions were also examined. Although this method did not completely resolve all beer proteinaceous fractions, it provides a rapid technique for estimating the molecular weight of soluble proteinaceous material in samples of brewing interest.
