EFFECT OF BILE SALT ON THE THERMAL BEHAVIOR OF A MONOGLYCERIDE-WATER SYSTEM

ABSTRACT

The thermal behavior of aqueous mixtures of monoglyceride and cholate has been examined by differential scanning calorimetry. The temperature of the maximum heat capacity for the a-gel to melt transition decreases monotonically with increasing cholate content. The existence of a large liquid region in the ternary phase diagram monoglyceride-cholate-water at 50°C is demonstrated.
