Rheological behaviour of rectified concentrated grape musts

Abstract

Rheological behaviour of rectified concentrated grape musts was studied in order to establish a relationship between viscosity and sugar concentration or temperature. Concentrated musts show Newtonian rheological behaviour and their behaviour is described by Doolittle's equation, which relates viscosity and specific volume.
