ABSTRACT
The take-out concept is increasing in popularity on most college and university campuses. This case study determined food cost, labor cost, and paperware cost associated with the take-out lunch line, Grab-it, in a midwestern university; ascertained student perceptions of quality and service; and identified cost-control issues. The study found that branded condiments used in the Grab-it line resulted in the extremely high food cost. Because of the popularity among students and their positive perception of foods served on the Grab-it lunch line, customer counts on this line are expected to increase continuously. Essential cost-control issues and solutions for the Grab-it lunch line are addressed.
